One Pan Lemon Chicken Gnocchi

Ingredients
  

For the Chicken
  • 1 lb chicken breast cut into 1-inch pieces
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
For the Gnocchi
  • 12 oz gnocchi fresh or frozen
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 2 tbsp lemon zest
  • 2 cloves garlic minced
  • 2 tbsp butter melted
  • 1/4 cup fresh parsley chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

Prepare the Chicken
  1. Preheat the air fryer to 400°F.
  2. In a large bowl, combine chicken pieces with garlic powder, paprika, salt, and black pepper.
  3. Add olive oil and mix well to coat.
Cook the Chicken
  1. Place seasoned chicken in the air fryer basket in a single layer.
  2. Cook for 10-12 minutes or until golden brown and cooked through.
Prepare the Sauce
  1. In a large skillet, heat 1 tbsp of olive oil over medium heat.
  2. Add minced garlic and cook until fragrant, about 30 seconds.
  3. Stir in chicken broth, lemon juice, and lemon zest.
  4. Bring to a simmer, then add melted butter, parsley, salt, and pepper.
Combine and Serve
  1. Add gnocchi to the sauce and toss gently to coat.
  2. Reduce heat to low and let simmer for 3-4 minutes.
  3. Serve the lemon chicken gnocchi in bowls, garnished with extra parsley.
