Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat, depending on preference
  • ¼ cup unsweetened cocoa powder
  • 3 tablespoons honey or maple syrup adjust for sweetness
  • ½ teaspoon vanilla extract
  • 1 ½ ounces dark chocolate melted (preferably 70% cacao or higher)
  • Pinch of salt
  • Optional toppings: whipped cream fresh berries, shaved chocolate, or crushed nuts

Instructions
 

  • Blend Cottage Cheese: Place the cottage cheese in a blender or food processor and blend until completely smooth. This step is crucial to achieving that silky mousse texture. Cottage cheese may seem chunky at first, but blending it makes it creamy and luscious.
  • Add Cocoa & Sweetener: Add the cocoa powder, honey (or maple syrup), vanilla extract, and salt into the blender with the cottage cheese. Blend until all ingredients are well combined and the mixture is smooth.
  • Incorporate Melted Chocolate: Melt the dark chocolate in a microwave-safe bowl in 20-second intervals, stirring between each, until fully melted. Pour the melted chocolate into the blender and blend again until the mixture is rich and velvety.
  • Taste Test: This is the perfect time to taste your mousse and adjust the sweetness or cocoa content. If you want a sweeter mousse, add an extra tablespoon of honey or syrup. For a richer chocolate flavor, a bit more cocoa powder or dark chocolate can be added.
  • Chill & Serve: Transfer the mousse into individual serving bowls or glasses. Let it chill in the refrigerator for at least 1 hour to firm up and intensify the flavors. Once chilled, you can top with your favorite toppings like fresh berries, whipped cream, or extra shaved chocolate.

Notes

• You can add instant coffee or espresso powder to intensify the chocolate flavor.
• For a vegan option, use dairy-free chocolate and a non-dairy cottage cheese alternative.
