Prepare and Preheat
- Preheat your air fryer to 350°F (175°C). Line the basket with parchment paper or spray with high-heat oil.
- In a large mixing bowl, combine the self-rising flour and Greek yogurt. Stir until just combined; the dough will be shaggy and sticky.
- Turn onto a lightly floured surface and knead gently for 30-60 seconds until smooth. Avoid over-mixing.
- Roll dough to 1/2 inch thick. Cut out donuts using a donut cutter or make rings by hand. Roll scraps into balls for donut holes.
- Place shaped donuts in air fryer basket, not touching, in batches if necessary.
- Air fry at 350°F for 6-8 minutes, flipping halfway, until golden and puffed.
- Brush warm donuts with melted butter and toss in cinnamon-sugar mixture immediately.
- Serve warm for best texture.

Notes
Store cooled uncoated donuts in an airtight container at room temperature for up to 2 days. Reheat in air fryer at 300°F for 1-2 minutes. For self-rising flour substitute: use 1 cup all-purpose flour + 1 1/2 tsp baking powder + 1/4 tsp salt. Use room temperature yogurt for better results.
