Prepare and Preheat
  1. Preheat your air fryer to 350°F (175°C). Line the basket with parchment paper or spray with high-heat oil.
  2. In a large mixing bowl, combine the self-rising flour and Greek yogurt. Stir until just combined; the dough will be shaggy and sticky.
  3. Turn onto a lightly floured surface and knead gently for 30-60 seconds until smooth. Avoid over-mixing.
  4. Roll dough to 1/2 inch thick. Cut out donuts using a donut cutter or make rings by hand. Roll scraps into balls for donut holes.
  5. Place shaped donuts in air fryer basket, not touching, in batches if necessary.
  6. Air fry at 350°F for 6-8 minutes, flipping halfway, until golden and puffed.
  7. Brush warm donuts with melted butter and toss in cinnamon-sugar mixture immediately.
  8. Serve warm for best texture.
