Ingredients
  

Garlic Bulbs (Whole Heads)
  • 2 heads garlic large, healthy heads without blemishes or sprouts
Seasoning & Oil
  • 1 tsp extra virgin olive oil per bulb
  • pinch sea salt
  • pinch black pepper
Optional Flavor Enhancers
  • 1 sprig fresh rosemary or thyme per bulb

Method
 

  1. Prep the Bulbs: Slice off about 1/4 inch from the top of each whole garlic head, exposing the cloves. Leave the paper skin intact to help with steaming.
  2. Season and Wrap: Place each bulb cut-side up on a piece of aluminum foil. Drizzle with ½ tsp olive oil and sprinkle lightly with salt and pepper. Tuck in a sprig of rosemary or thyme if desired.
  3. Create the Pocket: Fold up the foil edges and tightly wrap each bulb to create a sealed pocket. This traps steam for faster cooking and better texture.
  4. Load the Air Fryer: Preheat your air fryer to 400°F (200°C). Place the foil-wrapped bulbs directly into the basket.
  5. The Magic 5 Minutes: Cook for 5–7 minutes depending on bulb size. Start checking at 5 minutes — cloves should feel soft when gently pressed.
  6. Check and Serve: Carefully open the foil packet (it will be hot). Squeeze out the roasted cloves into a bowl and mash with a fork for a creamy spread.
