- Wash the potatoes thoroughly. Halve or quarter baby potatoes, or cube larger potatoes into 1-inch pieces. Pat them very dry with a kitchen towel to ensure crispiness.
- In a large mixing bowl, toss the potatoes with olive oil, minced fresh garlic, garlic powder, Italian seasoning, salt, and black pepper. Ensure every piece is evenly coated.
- Preheat the air fryer to 400°F (200°C) for 3-5 minutes. Lightly spray the air fryer basket with cooking spray if needed.
- Transfer the seasoned potatoes to the air fryer basket in a single layer (do not overcrowd). Cook at 400°F for 10 minutes.
- Open the basket and shake vigorously for even browning. Cook for another 5-10 minutes, until potatoes are fork-tender inside and golden outside with slightly charred edges.
- Remove the potatoes from the air fryer and transfer back to the mixing bowl. Sprinkle the Parmesan cheese over the hot potatoes and toss gently to coat with melted cheese.
- Garnish with fresh chopped parsley or chives and serve immediately. Optional: Add a squeeze of lemon juice for brightness.

For the crispiest results, do not crowd the air fryer basket and ensure potatoes are dry before cooking. Experiment with variations like adding red pepper flakes for heat or nutritional yeast for a vegan option. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated air fryer at 375°F for 5-7 minutes, shaking halfway, to regain crispiness.
