Prep the Potatoes
- Wash and cut the potatoes into uniform 1-inch cubes (halved for baby potatoes). Dry them thoroughly with a kitchen towel or paper towels to remove excess moisture for crispiest results.
Coat the Potatoes
- In a large mixing bowl, combine the dried potatoes with olive oil, salt, black pepper, and onion powder. Toss until evenly coated.
Air Fry First Phase
- Preheat air fryer to 400°F (200°C) for 3 minutes. Arrange potatoes in a single layer, working in batches if needed to avoid overcrowding. Air fry for 10 minutes, shaking the basket halfway through.
Add Garlic and Cheese
- Sprinkle garlic powder (and Italian seasoning if using) over the potatoes. Shake to distribute. Air fry for another 5 minutes until potatoes are tender and golden.
Finish and Serve
- Transfer hot potatoes back to the mixing bowl. Sprinkle with Parmesan cheese and toss immediately while hot to melt the cheese. Garnish with fresh herbs if desired and serve hot.

Notes
For extra crispiness, soak potatoes in cold water for 15 minutes before drying. Store leftovers in an airtight container in the fridge for up to 4 days and reheat in air fryer at 375°F for 3-5 minutes. Avoid using fresh minced garlic too early to prevent burning; if using, add during the last 5 minutes.
