- Slice the flank steak very thinly against the grain. In a medium bowl, combine the beef with 1 teaspoon sesame oil, 1 tablespoon soy sauce, and 1 tablespoon cornstarch. Toss well to coat. Marinate for at least 10 minutes.
- Prepare vegetables: cut broccoli into florets, thinly slice red bell pepper, carrot, and onion.
- In a small bowl, whisk together 2 teaspoons sesame oil, 1 tablespoon soy sauce, rice vinegar, grated ginger, minced garlic, and optional red pepper flakes. Set aside.
- Preheat the air fryer to 375°F (190°C) for about 5 minutes.
- Arrange marinated beef in a single layer in the air fryer basket. Air fry 6-8 minutes, shaking basket halfway through. Remove beef and set aside.
- Place vegetables in the air fryer basket. Optionally add a light spray of oil. Air fry at 375°F (190°C) for 8-12 minutes, shaking basket every 4-5 minutes until tender-crisp.
- Combine beef and vegetables in a large bowl or pan. Pour the stir fry sauce over and toss until evenly coated. Heat in a pan for 1-2 minutes if desired.
- Serve immediately, garnished with sesame seeds and chopped green onions. Enjoy over steamed rice, noodles, or cauliflower rice.

Notes
For a more tender beef, marinate for 30 minutes to an hour. Customize vegetables and spice level to taste. This recipe works well for meal prep and can be adapted for vegetarian, gluten-free, or spicy versions.
