  • 1 sheet puff pastry thawed
  • 8 oz lean ground beef
  • 2 tablespoons olive oil
  • 1/2 cup finely chopped mushrooms
  • 1/4 cup finely chopped onion
  • 1 clove garlic minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 egg egg beaten (for egg wash)

Instructions
 

  • In a skillet, heat olive oil over medium heat. Add the chopped onion and mushrooms and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Add the ground beef to the skillet and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
  • Stir in Dijon mustard, dried thyme, salt, and pepper. Mix well and remove from heat. Let the mixture cool slightly.
  • Unfold the thawed puff pastry on a lightly floured surface.
  • Using a pizza cutter or knife cut the puff pastry into small squares (about 2x2 inches).
  • Place a small spoonful of the beef mixture in the center of each square.
  • Fold the pastry squares over the filling to form triangles or rectangles. Press the edges firmly with a fork to seal.
  • Brush the tops of the pastries with the beaten egg.
  • Place the assembled Beef Wellington Bites in the air fryer basket in a single layer, avoiding overcrowding.
  • Air fry at 375°F (190°C) for 8-10 minutes, or until the pastry is golden brown and the filling is heated through.
