Prep the Components
- If using bacon, place strips in the air fryer basket at 350°F for 4-6 minutes until partially crisp. Remove and set aside. Grease 2 silicone cupcake liners or small ramekins. Pour the beaten egg mixture into each, seasoning with salt and pepper.
- Place English muffin halves cut-side up, egg cups, and sausage patties (if raw or frozen) in the air fryer basket. Cook at 325°F for 7 minutes.
- Carefully remove egg cups, flip patties if using sausage, and brush muffin halves with melted butter or mayonnaise.
Assemble and Finish
- Place cooked meat and eggs on muffin bottoms, top with cheese slice each.
- Return assembled sandwiches to air fryer at 350°F for 2-3 minutes until cheese melts and muffins are golden.
- Top with muffin tops and serve immediately.
