  • 2 English Muffins 2 split
  • 1 tablespoon 1 tablespoon melted butter or mayonnaise (for toasting)
For the Filling
  • 2 large eggs 2 lightly beaten with a splash of milk, salt, and black pepper
  • 2 pre-cooked breakfast sausage patties 2 or 4 slices bacon, or 2 slices Canadian bacon (frozen is fine)
  • 2 slices 2 slices American or sharp Cheddar cheese

Method
 

Prep the Components
  1. If using bacon, place strips in the air fryer basket at 350°F for 4-6 minutes until partially crisp. Remove and set aside. Grease 2 silicone cupcake liners or small ramekins. Pour the beaten egg mixture into each, seasoning with salt and pepper.
  2. Place English muffin halves cut-side up, egg cups, and sausage patties (if raw or frozen) in the air fryer basket. Cook at 325°F for 7 minutes.
  3. Carefully remove egg cups, flip patties if using sausage, and brush muffin halves with melted butter or mayonnaise.
Assemble and Finish
  1. Place cooked meat and eggs on muffin bottoms, top with cheese slice each.
  2. Return assembled sandwiches to air fryer at 350°F for 2-3 minutes until cheese melts and muffins are golden.
  3. Top with muffin tops and serve immediately.
