  • 1.5 lbs boneless, skinless chicken breasts cut into 1 inch cubes
Breading Mixture
  • 1/2 cup all purpose flour or a gluten free alternative
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs beaten
  • Olive oil spray
Buffalo Sauce
  • 1/2 cup Frank's RedHot Original sauce or your favorite hot sauce
  • 4 tbsp unsalted butter melted
  • 1 tbsp honey or maple syrup optional, for balance

Method
 

  1. Prepare Your Breading Station: In a shallow bowl, whisk together the flour, paprika, garlic powder, onion powder, salt, and pepper. In a second shallow bowl, whisk the eggs until smooth. Pat your cubed chicken dry with a paper towel.
  2. Dredge the Chicken: Working in small batches, dip chicken pieces into the beaten eggs, letting excess drip off. Then, transfer them to the flour mixture and toss gently to coat all sides. Shake off any extra flour and place on a clean plate.
  3. Preheat Your Air Fryer: Turn your air fryer to 400°F (200°C) and let it preheat for about 3 to 5 minutes.
  4. Arrange and Cook: Lightly spray the air fryer basket with olive oil spray. Arrange chicken pieces in a single layer, not overcrowding. You may need to cook in two batches. Spray tops with more oil spray. Air fry for 8 to 10 minutes, flipping halfway through. Chicken is done when golden brown, crispy, and cooked through.
  5. Make the Buffalo Sauce: While chicken cooks, whisk together melted butter and hot sauce in a large bowl. Add honey or maple syrup if using.
