Prepare the Dough
- Preheat your air fryer to 375°F (190°C). Divide the dough into 4 equal pieces. If using refrigerated dough, let it sit at room temperature for 20-30 minutes if needed.
- On a lightly floured surface, roll each dough piece into a rough circle or oval, about 7 inches in diameter. Leave a one-inch border clear around the edges.
- Place 1-2 tablespoons of marinara sauce on one side of the dough. Top with mozzarella, ricotta if using, and your choice of fillings like pepperoni and cooked sausage.
- Lightly moisten the edges of the dough with water or egg wash. Fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal, then crimp with a fork.
- Brush the entire surface with the beaten egg wash. Cut two small slits on the top for vents.
- Spray the air fryer basket with olive oil spray. Place 2 calzones in the basket (cook in batches if necessary). Air fry at 375°F (190°C) for 10-14 minutes, flipping halfway through, until golden brown and crispy.
- Remove and let rest for 2 minutes. Serve with extra marinara dipping sauce.

Notes
These calzones reheat well in the air fryer at 350°F for 5-7 minutes. Store cooled calzones in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. To reheat frozen, cook at 350°F for 12-16 minutes.
