- In a bowl, toss shredded chicken with cheese, bell pepper, cilantro, cumin and chili powder until evenly combined.
- Lay tortillas flat and divide the filling evenly over one half of each tortilla. Fold the empty side over to create a half-moon shape.
- Brush both sides of each quesadilla lightly with olive oil.
- Preheat air fryer to 375 °F (190 °C). Place quesadillas in a single layer (work in batches if needed) and cook 4 minutes.
- Flip and cook 3–4 minutes more until golden brown and cheese is melted.
- Transfer to a cutting board, let rest 1 minute, then slice into wedges and serve hot.
