Prepare the Gnocchi
- Open the package of gnocchi and pour the dumplings onto a clean kitchen towel. Pat them briefly to remove any excess starch or surface moisture. This helps them crisp up beautifully.
- In a medium bowl, combine the gnocchi, olive oil, garlic powder, Italian seasoning, paprika (if using), salt, and pepper. Use your hands or a rubber spatula to toss until every single potato dumpling is lightly coated in the seasoned oil. You want a thin, glistening layer, not a pooling of oil at the bottom of the bowl.
- Preheat the air fryer to 400°F (200°C). Arrange the seasoned gnocchi in the air fryer basket in a single layer (work in batches if necessary). Cook for 5 minutes.
- After 5 minutes, remove the basket and give it a hearty shake. Return to the air fryer and cook for another 3 to 5 minutes, until the gnocchi are golden brown and blistered.
- Transfer the cooked gnocchi to a clean bowl. Toss with the grated Parmesan cheese while still hot so the cheese adheres. Serve immediately.

Notes
For best results, avoid overcrowding the basket to ensure even crisping. Leftover gnocchi can be stored in the fridge for up to 3 days and reheated in the air fryer at 375°F for 3-4 minutes to regain crispiness. Experiment with seasonings like Cajun or lemon pepper for variety.
