Air Fryer Lemon Blueberry Cake

This quick and easy air fryer lemon blueberry cake is incredibly moist with a burst of fresh lemon and sweet blueberries, perfect for a small-batch dessert without heating up the whole kitchen.

Ingredients
  

  • 1 cup Dry Ingredients all-purpose flour, sifted
  • 1/3 cup Sugar granulated sugar
  • 1 tbsp Brown Sugar for topping (optional)
  • 1 tsp Baking Powder
  • 1/4 tsp Salt fine sea salt
Wet Ingredients
  • 4 tbsp Butter melted and cooled slightly
  • 1 Egg large egg, room temperature
  • 1/3 cup Milk or buttermilk/plain yogurt
  • 1 tsp Vanilla Extract
  • 1 tbsp Lemon Juice fresh
  • Lemon Zest from 1 large lemon
  • 1 cup Blueberries fresh or frozen (if frozen, toss with 1 tsp flour before adding)

Method
 

Prep
  1. Lightly grease a 6-inch round baking pan (or small aluminum foil pan that fits your air fryer). Line the bottom with a small parchment circle. Preheat your air fryer to 320°F (160°C).
  2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. Set aside.
  3. In a separate small bowl, whisk together the melted butter, egg, milk, vanilla extract, lemon juice, and lemon zest until well combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined; batter should be thick and slightly lumpy. Gently fold in the blueberries.
  5. Pour the batter into the prepared pan. Sprinkle optional brown sugar on top. Transfer to air fryer and cook at 320°F for 20-25 minutes, or until internal temperature reaches 200-210°F. If browning too quickly, cover with foil.
  6. Insert a skewer into the center; it should come out clean or with moist crumbs. Cool in pan for 10 minutes, then turn onto wire rack to cool completely.

Notes

Use 320°F to prevent burning; for a glaze, mix 1/2 cup powdered sugar with 1 tbsp lemon juice. Store in airtight container up to 3 days at room temp or 5 in fridge; freeze wrapped up to 3 months. Reheat slices in air fryer at 300°F for 3-5 minutes.
