- Lightly grease a 6-inch round baking pan (or small aluminum foil pan that fits your air fryer). Line the bottom with a small parchment circle. Preheat your air fryer to 320°F (160°C).
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. Set aside.
- In a separate small bowl, whisk together the melted butter, egg, milk, vanilla extract, lemon juice, and lemon zest until well combined.
- Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined; batter should be thick and slightly lumpy. Gently fold in the blueberries.
- Pour the batter into the prepared pan. Sprinkle optional brown sugar on top. Transfer to air fryer and cook at 320°F for 20-25 minutes, or until internal temperature reaches 200-210°F. If browning too quickly, cover with foil.
- Insert a skewer into the center; it should come out clean or with moist crumbs. Cool in pan for 10 minutes, then turn onto wire rack to cool completely.

Notes
Use 320°F to prevent burning; for a glaze, mix 1/2 cup powdered sugar with 1 tbsp lemon juice. Store in airtight container up to 3 days at room temp or 5 in fridge; freeze wrapped up to 3 months. Reheat slices in air fryer at 300°F for 3-5 minutes.
