- Preheat your air fryer to 380°F (190°C). A hot basket is key to getting crispy carrots.
- While the air fryer preheats, wash and peel your carrots. Slice them on a slight diagonal, about 1/4-inch thick. Try to keep the thickness uniform.
- In a mixing bowl, toss the sliced carrots with olive oil until evenly coated.
- Add grated Parmesan cheese, garlic powder, Italian seasoning, smoked paprika, salt, and pepper. Toss until each carrot slice is well coated.
- Transfer seasoned carrots to the preheated air fryer basket in a single layer. Do not overcrowd the basket.
- Cook for 12-15 minutes, shaking the basket halfway through. Cook until carrots are fork-tender and Parmesan is golden and crispy.
- Garnish with fresh parsley and serve immediately while hot and crispy.

Notes
For the crispiest results, avoid overcrowding the air fryer. If using baby carrots, increase the cook time by a couple of minutes. These carrots are best served fresh but can be reheated in the air fryer for 3-5 minutes to restore crispiness.
