Sausage and Vegetables
  • 1 package 1 (12 oz) package pre cooked chicken sausage or smoked sausage, sliced into ½-inch thick coins
  • 1 large 1 large red bell pepper, seeded and chopped into large chunks
  • 1 1 yellow bell pepper, seeded and chopped into large chunks
  • 1 medium 1 medium red or yellow onion, roughly chopped
  • 1 medium 1 medium zucchini, chopped into medium pieces
  • 1 1 yellow squash, chopped into medium pieces
Seasonings
  • 1 tablespoon 1 tablespoon avocado oil or olive oil
  • 1 teaspoon 1 teaspoon Italian seasoning
  • ½ teaspoon ½ teaspoon paprika
  • ½ teaspoon ½ teaspoon garlic powder

Preparation
  1. In a large mixing bowl, combine the sliced sausage, chopped bell peppers, onions, zucchini, and squash.
  2. Drizzle with the avocado oil and sprinkle with Italian seasoning, paprika, garlic powder, salt, and pepper. Toss until everything is evenly coated.
  3. Preheat the air fryer to 400°F (200°C) for about 3-5 minutes if your model supports it.
  4. Transfer the mixture into the air fryer basket, ensuring a single layer. If needed, cook in batches.
  5. Cook at 400°F (200°C) for 8 minutes.
  6. Shake the basket vigorously and continue cooking for another 7-10 minutes until vegetables are tender-crisp and sausage is browned.
  7. Serve immediately, garnished with fresh parsley or grated Parmesan cheese if desired.
