Shrimp
  • 1 lb large shrimp, peeled and deveined, tails on or off
Sauce Ingredients
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 4-6 cloves garlic, minced
  • 1/4 cup dry white wine or chicken broth
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1 lemon half juiced, half cut into wedges for serving

Method
 

  1. Prepare the shrimp and sauce: Pat the shrimp dry with paper towels. In a medium bowl, combine melted butter, olive oil, minced garlic, white wine (or broth), red pepper flakes, salt, and pepper until well mixed.
  2. Marinate the shrimp: Pour 2/3 of the sauce over shrimp and toss to coat. Let marinate for 10 minutes while the air fryer preheats.
  3. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  4. Arrange the shrimp in a single layer in the air fryer basket, avoiding overcrowding.
  5. Cook at 400°F (200°C) for 6-8 minutes, or until shrimp are pink, opaque, and curled into a loose 'C' shape.
  6. Transfer shrimp to the bowl with sauce, add parsley and lemon juice. Toss to combine and serve immediately with extra lemon wedges.
