Ingredients
  

Shrimp
  • 1 lb large shrimp (21 25 count) peeled, deveined, tails on or off
Marinade
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 lemon zest and juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley chopped

  • wooden or metal skewers if using wooden, soak in water for 20 minutes

Method
 

  1. If using wooden skewers, soak them in water for at least 20 minutes before use.
  2. In a medium bowl, whisk together olive oil, minced garlic, smoked paprika, dried oregano, lemon zest, lemon juice, salt, and pepper.
  3. Pat shrimp dry with paper towels and add to the marinade. Toss until evenly coated and let sit for 10 minutes.
  4. Thread shrimp onto skewers, about 4-5 per skewer. Pierce through the thickest part and near the tail to ensure even cooking.
  5. Preheat the air fryer to 375°F (190°C) for a few minutes.
  6. Place skewers in the air fryer basket in a single layer, ensuring they are not overcrowded.
  7. Cook for 6-8 minutes, flipping halfway through at around 4 minutes.
  8. Shrimp are done when they turn opaque and pink and curl into a C shape. Internal temperature should reach 145°F (63°C).
  9. Transfer skewers to a serving platter and sprinkle with fresh parsley before serving.
