Ingredients
  

For the Steak Bites
  • 1.5 lbs Steak center-cut Top Sirloin, Ribeye, or New York Strip, trimmed of excess fat and cut into 1-inch cubes
  • 1 tablespoon Olive Oil or Avocado Oil for coating and crisping
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper freshly ground
  • 1 teaspoon Smoked Paprika for depth of flavor
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
For the Garlic Butter Finish
  • 2 tablespoons Unsalted Butter
  • 3 cloves Fresh Garlic minced
  • 1 teaspoon Fresh Thyme chopped, or rosemary
  • 1 tablespoon Fresh Parsley chopped

Method
 

  1. Pat the steak cubes thoroughly dry with paper towels to ensure a crispy exterior. In a mixing bowl, toss the steak with the olive oil or avocado oil, Kosher salt, black pepper, smoked paprika, garlic powder, and onion powder until evenly coated.
  2. Preheat your air fryer to 400°F (200°C) for optimal searing.
  3. Arrange the seasoned steak cubes in a single layer in the air fryer basket, ensuring space between pieces for air circulation to promote even cooking.
  4. Cook the steak bites for 6 to 8 minutes, shaking or flipping the basket halfway through (around the 3-4 minute mark). For medium-rare, aim for 6 minutes; for medium, 8 minutes. Test one piece if unsure.
  5. While the steak rests in a bowl for 3 minutes, melt the butter in a small pan over medium heat. Add the minced garlic and fresh thyme, sautéing for about 30 seconds until fragrant.
  6. Pour the garlic butter mixture over the resting steak bites and toss gently to coat. Garnish with fresh chopped parsley and serve immediately.
