Prepare the Strawberry Filling
- In a medium bowl, gently toss the diced fresh strawberries with the granulated sugar, cornstarch, vanilla extract, and lemon zest. Set aside.
Prep the Puff Pastry
- Unfold the thawed puff pastry sheet onto a lightly floured surface. Cut into four equal squares, then cut each square in half to make eight smaller squares.
- Spoon about 1 1/2 to 2 tablespoons of the strawberry filling onto one half of each square, leaving a border. Fold the empty half over to form a triangle.
- Use a fork to firmly seal the edges. Brush the entire surface with egg wash.
Air Fry the Turnovers
- Preheat the air fryer to 400°F. Spray the basket lightly with non-stick cooking spray.
- Place 3 to 4 turnovers in the basket (do not overcrowd). Cook for 10 to 12 minutes, until golden brown and puffed.
- Remove and let cool on a wire rack for at least 10 minutes.
Glaze and Serve
- Mix powdered sugar with milk to make a glaze. Drizzle over cooled turnovers. Serve warm.

Notes
For freezer-friendly: Assemble and freeze unbaked turnovers. Cook from frozen at 375°F for 15-18 minutes. Store baked turnovers in an airtight container at room temperature for up to 2 days. Reheat in air fryer at 350°F for 3-5 minutes.
