- Wash and dry the zucchini. Trim off the ends. Cut each zucchini in half crosswise, then slice each half into spears about the thickness of a thick cut french fry, roughly a half inch thick.
- Set up a breading station with three shallow dishes or plates. In the first dish, whisk together flour, salt, and pepper. In the second dish, lightly beat the eggs. In the third dish, stir together the panko breadcrumbs, grated parmesan cheese, garlic powder, and Italian seasoning.
- Working with one zucchini spear at a time, first dredge it lightly in the flour mixture, tapping off any excess. Next, dip the floured spear into the beaten egg. Finally, press the spear firmly into the panko mixture, turning to coat all sides completely.
- Preheat the air fryer to 400°F (200°C) for 3 to 5 minutes. Lightly spray the air fryer basket with olive oil spray.
- Arrange the breaded zucchini spears in a single layer in the air fryer basket. Lightly spritz the tops of the zucchini fries with a little more olive oil spray. Cook for 8 to 10 minutes, flipping halfway through, until golden brown and wonderfully crispy.

Notes
For best results, salt the zucchini spears for 15-20 minutes before cooking to remove excess moisture. Cook in batches if needed to avoid overcrowding. Serve immediately while hot for maximum crispiness.
