- In a large skillet, cook the ground chicken over medium-high heat until browned. Drain excess fat if needed.
- Add the onion, bell pepper, and garlic to the skillet. Cook until softened, about 5 minutes.
- Stir in the Cajun seasoning, paprika, chili powder, and cayenne pepper (if using). Let the spices cook for 1-2 minutes.
- Pour in the chicken broth and diced tomatoes. Stir to combine, bring to a simmer, and let cook for 10-15 minutes to let the flavors meld.
- Toast the buns and scoop the Cajun chicken mixture onto each bun. Garnish with fresh parsley, and serve.
