Ingredients
  

  • 4 cups 4 cups of russet potatoes, peeled and cubed into small pieces peeled and cubed
  • 1 medium 1 medium yellow onion, finely diced finely diced
  • 4 cups 4 cups of chicken broth or vegetable stock
  • 2 cups 2 cups of whole milk or half and half for extra richness
  • 4 tablespoons 4 tablespoons of unsalted butter unsalted
  • 1 cup 1 cup of wide egg noodles or homemade Amish kluski noodles
  • 1.5 teaspoons 1 teaspoon of sea salt and half a teaspoon of black pepper sea salt and black pepper
  • 1 cup Optional: 1 cup of sharp cheddar cheese for topping sharp cheddar cheese
  • Optional: Fresh parsley for garnish fresh parsley
