Ingredients
  

For the Batter
  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2/3 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 medium apple peeled, cored, and finely diced
  • vegetable oil for frying, about 2-3 inches in a pot

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Method
 

Prepare Ingredients
  1. Peel, core, and finely dice the apple into small, uniform pieces about 1/4 inch in size. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt.
  2. In a separate bowl, whisk the egg, then add the milk and vanilla extract, mixing until just combined.
  3. Pour the wet ingredients into the dry ingredients. Mix with a spatula until just combined; do not overmix. Fold in the diced apples gently.
Fry Bites
  1. Pour 2-3 inches of vegetable oil into a heavy-bottomed pot. Heat over medium heat until the oil reaches 350-360°F (175-180°C).
  2. Using two spoons or a small cookie scoop, drop rounded tablespoons of batter into the hot oil. Fry for 2-3 minutes per side until golden brown. Remove with a slotted spoon and drain on a wire rack lined with paper towels.
  3. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Dip or drizzle over the warm bites and serve immediately.
