Ingredients
  

Chicken Thighs

  • 6-8 pieces bone-in, skin-on chicken thighs Can substitute with boneless, skinless thighs; cooking time will vary

Balsamic Glaze Ingredients

  • 1/2 cup balsamic vinegar Use high-quality for best flavor
  • 1/4 cup honey or maple syrup Maple syrup or brown sugar can be used as substitutes
  • 3-4 cloves garlic, minced Adjust to taste for milder flavor
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil For searing the chicken
  • 1 teaspoon dried Italian seasoning Or pinch each of dried oregano, basil, thyme
  • 1 teaspoon salt Adjust to taste
  • to taste black pepper Freshly ground recommended
  • 1/2 teaspoon red pepper flakes Optional for a subtle kick
  • fresh parsley or thyme For garnish, optional

Instructions
 

  • Pat the chicken thighs dry with paper towels. Season both sides generously with salt, black pepper, and Italian seasoning.
  • Whisk together balsamic vinegar, honey (or maple syrup), minced garlic, Dijon mustard, and red pepper flakes (if using) in a medium bowl. Set aside.
  • Heat olive oil in a large oven-safe skillet over medium-high heat. When shimmering, place chicken thighs skin-side down and sear for 6-8 minutes until golden and crispy.
  • Flip chicken thighs to flesh side, reduce heat to medium-low, and pour the balsamic glaze over them. Simmer gently, spooning glaze over chicken for 2-3 minutes.
  • Transfer the skillet to a preheated oven at 375°F (190°C). Bake for 15-20 minutes until internal temperature reaches 165°F (74°C). Baste occasionally with glaze.
  • Remove from oven and transfer chicken to a platter. Let rest for 5-10 minutes. Spoon any remaining glaze over the chicken and garnish with fresh parsley or thyme before serving.

Notes

This recipe is naturally gluten-free and perfect for meal prepping. Try adding roasted vegetables to the skillet for a complete sheet-pan dinner.
