Banana Oatmeal Bars

Ingredients
  

  • 3 large Bananas very ripe
  • 2 cups Old Fashioned Rolled Oats
  • 2 large Eggs
  • 1/4 cup Maple Syrup or Honey
  • 1/2 cup Almond Milk
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 cup Chocolate Chips or Nuts optional

Method
 

  1. Preheat your oven to 350 degrees. Line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, peel your bananas and mash them until they are mostly smooth.
  3. Whisk in your eggs, maple syrup, vanilla extract, and almond milk.
  4. Fold in the oats, cinnamon, baking powder, and a pinch of salt.
  5. This is where you add your chocolate chips or nuts.
  6. Pour the mixture into your prepared pan and smooth the top with a spatula. Bake for 25 to 30 minutes.
  7. Allow the bars to cool in the pan for at least twenty minutes.
