Ingredients

  • 3 large Bananas very brown
  • 2 cups Oats rolled
  • 1.5 cups Flour whole wheat pastry flour
  • 2 large Eggs
  • 0.5 cup Butter unsalted, melted
  • 0.5 cup Sugar brown sugar
  • 1 tsp Baking Soda
  • 0.5 tsp Salt
  • 1 tsp Vanilla Extract
  • 1 cup Chocolate Chips
  • 0.25 cup Peanut Butter optional

Equipment

  • Mixing bowl

  • oven

Method

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking pan with parchment paper, leaving a little overhang on the sides.
  2. In a large mixing bowl, peel your bananas. Mash them until they are mostly liquid but still have a few small lumps for texture.
  3. Whisk in your melted butter, eggs, and vanilla extract.
  4. Fold in your dry ingredients, including oats, flour, sugar, baking soda, and salt. The mixture will look thick and hearty.
  5. Add your chocolate chips or nuts.
  6. Pour the batter into the prepared pan and smooth the top with a spatula. Bake for about 25 minutes until the edges are golden brown and the center feels set to the touch.
  7. Let them cool completely before slicing. This ensures clean cuts and the perfect chewy texture.

Notes

These bars keep remarkably well. You can store them in an airtight container at room temperature for up to two days, or in the refrigerator for up to a week. If you want to make a big batch, they freeze beautifully. Wrap individual bars in parchment and place them in a freezer bag. When the morning rush hits, just grab one and let it thaw on the counter or give it a quick thirty second zap in the microwave.
