Banana Oatmeal Bars

These healthy banana oatmeal bars are a quick breakfast for busy mornings, a healthy snack after school, and a portable breakfast for days when you are on the go.

Ingredients
  

Mashed Bananas
  • 3 ripe bananas peeled and mashed
Wet Ingredients
  • 1/4 cup maple syrup
  • 1/4 cup nut butter peanut butter or almond butter
  • 1 tsp vanilla extract
Dry Ingredients
  • 2 cups rolled oats old-fashioned
  • 1 tsp cinnamon
  • 1/4 tsp salt
Mix-Ins
  • 1/2 cup chocolate chips optional
  • 1/2 cup chopped nuts optional

Method
 

Preheat and Prep
  1. In a large mixing bowl, peel and add your bananas. Use a fork to mash them until they are mostly smooth. You can leave a few small chunks for texture.
  2. To the mashed bananas, add the maple syrup, nut butter, and vanilla extract. Stir them together with a wooden spoon until everything is well combined and smooth.
  3. Pour in the rolled oats, cinnamon, and a pinch of salt. Stir until all the oats are evenly coated. The batter will be wet and thick. If the mixture seems too dry, add a tablespoon of milk (dairy or non-dairy) to loosen it up.
  4. Gently fold in your chocolate chips, nuts, or any other add-ins you love. Distribute them evenly throughout the batter.
  5. Pour the batter into the prepared pan. Use the back of a spatula to spread it into an even layer. Bake for 20 to 25 minutes. The edges will turn golden brown and the center will feel firm to the touch.
  6. Let the bars cool in the pan on a wire rack for at least 15 minutes. Then, use the parchment paper handles to lift the block out. Let it cool completely before slicing. Use a sharp knife for clean cuts.
