  • 2 lbs Chicken cut into bite-sized pieces
  • 1/4 cup Cornstarch
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 cups Jasmine Rice cooked
  • 1/2 cup Mayonnaise
  • 2 tbsp Sweet Chili Sauce
  • 1 tbsp Honey
  • 1 tbsp Sriracha
  • 2 medium Carrots shredded
  • 1 medium Cucumber thinly sliced
  • 1 cup Red Cabbage shredded
  • 2 stalks Green Onions chopped
  • 1 tbsp Sesame Seeds
  • 1 tbsp Lime Juice

Method
 

Prepare the Chicken
  1. Heat a skillet over medium-high heat. Add the chicken in a single layer and cook for 5-6 minutes on each side until crispy. Remove from heat and set aside.
Prepare the Sauce
    Assemble the Bowls
    1. Place the crispy chicken on top of the vegetables. Drizzle the bang bang sauce over the chicken and vegetables.
    2. Garnish with chopped green onions and sesame seeds. Squeeze lime juice over the top.
