- Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven while preheating.
- In a medium bowl, combine cooked chicken with half a cup of BBQ sauce. Stir until the chicken is evenly coated.
- Unroll the pre-made crust or roll out homemade dough to desired thickness. Transfer to a baking sheet or pizza stone.
- Spread the remaining BBQ sauce evenly over the crust, leaving a small border around the edges.
- Sprinkle half of the mozzarella and gouda cheeses over the sauce. Add the BBQ chicken mixture and thinly sliced red onion.
- Top with the remaining mozzarella and gouda cheeses. Bake for 12–18 minutes, until the crust is golden brown and cheese is bubbly.
- Remove from the oven, garnish with fresh cilantro, and let it cool slightly before slicing and serving.
