  • 1 (10-12 ounce) pre-made pizza crust or homemade dough
For the Chicken
  • 1 ½ cups cooked chicken shredded or diced (leftover rotisserie chicken works well)
  • ½ cup BBQ sauce smoky, slightly sweet variety
For the Toppings
  • ½ cup red onion thinly sliced
  • 1 cup shredded mozzarella cheese
  • ½ cup smoked gouda cheese shredded
  • ¼ cup fresh cilantro chopped (for garnish)
Optional Additions
  • pineapple chunks for Hawaiian style
  • jalapeños sliced for spicy kick
  • bell peppers sliced

Method
 

  1. Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven while preheating.
  2. In a medium bowl, combine cooked chicken with half a cup of BBQ sauce. Stir until the chicken is evenly coated.
  3. Unroll the pre-made crust or roll out homemade dough to desired thickness. Transfer to a baking sheet or pizza stone.
  4. Spread the remaining BBQ sauce evenly over the crust, leaving a small border around the edges.
  5. Sprinkle half of the mozzarella and gouda cheeses over the sauce. Add the BBQ chicken mixture and thinly sliced red onion.
  6. Top with the remaining mozzarella and gouda cheeses. Bake for 12–18 minutes, until the crust is golden brown and cheese is bubbly.
  7. Remove from the oven, garnish with fresh cilantro, and let it cool slightly before slicing and serving.
