- Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
- Brown the ground beef in a large skillet over medium-high heat. Drain excess grease.
- Stir in taco seasoning according to package directions. Add 1/4 cup enchilada sauce to the beef and simmer 5 minutes.
- Warm tortillas by wrapping in damp paper towel and microwaving for 30 seconds or heating lightly in a dry skillet.
- Spread a thin layer of enchilada sauce at the bottom of the baking dish.
- Fill each tortilla with beef mixture and a sprinkle of cheddar cheese, then roll tightly and place seam-down in dish.
- Pour remaining enchilada sauce evenly over rolled tortillas. Sprinkle remaining cheddar cheese on top.
- Bake for 20-25 minutes until cheese is melted and bubbly, and enchiladas are heated through.
- While baking, prepare spooky decorations: slice black olives to look like spiders, and prepare sour cream in a piping bag for spiderwebs or ghosts.
- After baking, decorate enchiladas with black olive spiders and sour cream designs. Optionally, sprinkle Halloween candy for extra fun. Serve immediately.
