Ingredients
  

Cream Cheese Base

  • 16 ounces cream cheese softened, divided in 2 packages of 8 ounces
  • 1/2 cup mayonnaise full-fat for best creaminess
  • 1/4 cup sour cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt or to taste
  • 1/4 cup green onions or chives finely chopped plus extra for garnish
  • 1/4 cup red bell pepper finely chopped, optional for color and subtle crunch

Blood Sauce

  • 1/2 cup tomato sauce
  • 2 tablespoons sriracha or hot sauce adjust to your spice preference
  • 1 tablespoon red wine vinegar or apple cider vinegar
  • 1 teaspoon sugar or maple syrup
  • pinch salt
  • red food coloring optional, for more vivid color

Instructions
 

  • In a large mixing bowl, combine softened cream cheese, mayonnaise, and sour cream. Beat on medium speed with an electric mixer until smooth and creamy, about two to three minutes. Ensure no lumps remain.
  • Add Worcestershire sauce, garlic powder, onion powder, black pepper, and salt to the cream cheese mixture. Continue beating until spices are fully incorporated. Taste and adjust seasoning if necessary.
  • Fold in finely chopped green onions or chives and optional red bell pepper gently with a spatula, distributing evenly without overmixing.
  • Line a small, shallow bowl with plastic wrap with overhang on all sides. Spoon the cream cheese mixture into the bowl, pressing firmly to remove air pockets. Smooth the top.
  • Cover tightly with plastic wrap and refrigerate for at least two to four hours or overnight to firm up.
  • Select a white or light-colored serving platter and arrange your desired dippers around the edge.
  • In a small bowl, whisk together tomato sauce, sriracha or hot sauce, red wine vinegar, sugar, and a pinch of salt. Add red food coloring if using for more vivid red color. Adjust spice and sweetness as desired.
  • Remove chilled dip from refrigerator. Peel back plastic wrap top gently. Place serving platter upside down over the bowl. Carefully flip together and lift bowl away. Slowly peel plastic wrap from the brain-shaped dip.
  • Using the back of a spoon or dull knife, gently create shallow swirling indentations on the surface to mimic brain folds and enhance the realistic look.
  • Spoon the blood sauce over the top of the dip, letting it ooze down sides and into indentations for a spooky effect. Garnish with extra chopped green onions or chives.
  • Serve immediately with assorted dippers like crackers, pita chips, tortilla chips, pretzel thins, and fresh vegetable sticks such as carrots, celery, and bell peppers.

Notes

Make sure your cream cheese is well softened for a smooth and creamy texture. Chill the dip long enough for firm molding. This dip is meant to be served chilled and will not hold shape if warmed.
