- Prepare your lettuce cups by carefully separating the leaves from the head of lettuce. Rinse the leaves under cool water and pat them completely dry with a paper towel or salad spinner.
- Heat a large skillet over medium high heat and add the olive oil. Once shimmering, add the finely diced chicken breast and season with salt and black pepper. Cook for 5 to 7 minutes or until cooked through and lightly golden, breaking it up into small crumbles. Drain any excess liquid from the pan.
- In a small bowl, whisk together the melted butter, hot sauce, garlic powder, and onion powder until smooth and emulsified.
- Reduce the heat to low under the skillet, pour the buffalo sauce over the cooked chicken, and stir gently to coat all pieces of chicken. Let it simmer for 1-2 minutes to meld the flavors.
- Assemble and serve by placing the buffalo chicken alongside the prepared lettuce cups, shredded carrots, chopped celery, and dressings. Let everyone build their own chicken lettuce wraps.
