Ingredients
  

  • 1 lb boneless, skinless chicken breast finely diced
  • 1 tablespoon olive oil
  • 1/2 cup hot sauce like Frank's Red Hot
  • 3 tablespoons unsalted butter melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 head lettuce butter lettuce or romaine hearts
  • 1/2 cup shredded carrots
  • 1/2 cup finely chopped celery
  • blue cheese dressing or ranch dressing for drizzling
  • blue cheese crumbles for topping (optional)
  • sliced green onions for topping (optional)

Method
 

  1. Prepare your lettuce cups by carefully separating the leaves from the head of lettuce. Rinse the leaves under cool water and pat them completely dry with a paper towel or salad spinner.
  2. Heat a large skillet over medium high heat and add the olive oil. Once shimmering, add the finely diced chicken breast and season with salt and black pepper. Cook for 5 to 7 minutes or until cooked through and lightly golden, breaking it up into small crumbles. Drain any excess liquid from the pan.
  3. In a small bowl, whisk together the melted butter, hot sauce, garlic powder, and onion powder until smooth and emulsified.
  4. Reduce the heat to low under the skillet, pour the buffalo sauce over the cooked chicken, and stir gently to coat all pieces of chicken. Let it simmer for 1-2 minutes to meld the flavors.
  5. Assemble and serve by placing the buffalo chicken alongside the prepared lettuce cups, shredded carrots, chopped celery, and dressings. Let everyone build their own chicken lettuce wraps.
