Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes scrubbed clean
Chicken
  • 2 cups cooked shredded chicken rotisserie chicken works wonderfully
Buffalo Sauce Mixture
  • 1/2 cup buffalo sauce adjust to preferred spice level
  • 2 tbsp unsalted butter optional, for richness
  • 1/4 cup plain Greek yogurt or sour cream for creaminess and balance
  • 2 tbsp fresh chives minced for garnish
Toppings
  • 1/2 cup crumbled blue cheese or shredded cheddar optional
  • salt and black pepper to taste

  • 1/4 cup sliced green onions
  • 1/2 tsp red pepper flakes for extra heat

Method
 

  1. Preheat your oven to 400°F (200°C). Thoroughly scrub your sweet potatoes under cold water. Pat them dry.
  2. Using a fork, pierce each sweet potato several times all over. This helps steam escape and prevents them from exploding in the oven.
  3. Place the sweet potatoes directly on a baking sheet. Bake for 45-60 minutes, or until they are fork-tender.
  4. While the sweet potatoes are baking, prepare your chicken. If you’re using a store-bought rotisserie chicken, simply shred the meat using two forks.
  5. In a large bowl, combine the shredded chicken, buffalo sauce, and optional butter (melted slightly). Stir well to ensure all chicken is coated.
  6. If you’re using Greek yogurt or sour cream, stir about half of it into the chicken mixture to make it extra creamy.
  7. Once the sweet potatoes are tender, carefully remove them from the oven.
  8. Using a sharp knife, slice each sweet potato lengthwise down the middle, being careful not to cut through the bottom. Create a pocket for stuffing.
  9. Gently fluff the inside flesh of each sweet potato with a fork. Spoon the buffalo chicken mixture into each sweet potato boat.
  10. If you’re adding cheese, sprinkle the crumbled blue cheese or shredded cheddar over the top of the buffalo chicken filling.
  11. Return the stuffed sweet potatoes to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.
  12. Carefully remove from the oven. Garnish with fresh minced chives.
  13. For an extra touch, drizzle with the remaining Greek yogurt or sour cream, or a light amount of ranch or blue cheese dressing.
