Cajun White Chicken Chili

Ingredients
  

  • 1.5 pounds Chicken boneless, skinless, cut into bite-sized pieces
  • 2 cans (15 ounces each) White Beans cannellini or great northern, drained and rinsed
  • 1 can (14.5 ounces) Diced Tomatoes undrained
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 2 tablespoons Cajun Seasoning store-bought or homemade
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin ground
  • 1 teaspoon Smoked Paprika
  • 0.5 teaspoon Salt adjust to taste
  • 0.25 teaspoon Black Pepper
  • 2 tablespoons Olive Oil
  • 4 cups Chicken Broth low sodium
  • 1 cup Frozen Corn
  • 1 medium Bell Pepper red or green, diced
  • 1 optional Jalapeño seeded and minced for extra heat
  • 0.5 cup Heavy Cream or Coconut Milk optional for a creamy finish

Method
 

  1. Dice the onion, mince the garlic, and chop the bell pepper. Cut the chicken into bite-sized cubes. Let the chicken sit at room temperature for 10 minutes so it cooks evenly.
  2. Heat olive oil in a large Dutch oven over medium heat. Add the onion and bell pepper. Cook until soft, about 4 minutes, stirring occasionally. Add the garlic and cook for 30 seconds more, until fragrant.
  3. Push the vegetables to the sides of the pot. Add the chicken pieces in a single layer. Let them sear undisturbed for 2 minutes, then toss. The chicken should be golden on the outside but not fully cooked through.
  4. Sprinkle the Cajun seasoning, chili powder, cumin, smoked paprika, salt, and pepper over the chicken and vegetables. Stir constantly for about 1 minute.
  5. Pour in the chicken broth and diced tomatoes with their juices. Use a wooden spoon to scrape up any browned bits from the bottom of the pot. Add the rinsed white beans. Bring the chili to a gentle boil, then reduce the heat to low. Let it simmer for 20 minutes.
  6. Stir in the frozen corn and optional jalapeño. Simmer for another 5 minutes. If you want a creamier texture, pour in the heavy cream or coconut milk and stir gently. Taste and adjust seasoning with extra salt or a dash of hot sauce.
  7. Turn off the heat and let the chili sit for 5 minutes. Ladle into bowls and top with fresh cilantro, shredded cheese, or a dollop of sour cream.

Notes

For the slow cooker version, complete steps 1 through 3 in a skillet, then transfer everything to a slow cooker. Add the broth, tomatoes, and beans. Cook on low for 6 hours or high for 3 hours. Add the corn and cream during the last 30 minutes.
