Cheesy Cajun Garlic Chicken Rotini Skillet

Ingredients
  

Chicken
  • 1 lb chicken breast cut into bite-sized pieces
Aromatics and Seasonings
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 medium onion diced
  • 1 bell pepper diced (red or green)
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp thyme
  • salt and pepper to taste
Sauce
  • 2 cups chicken broth
  • 1 cup heavy cream or half and half for a lighter version
  • 4 oz cream cheese softened
  • 1 cup Parmesan cheese shredded
Pasta
  • 12 oz rotini pasta or any short pasta
Optional
  • jalapeños sliced for heat
  • fresh parsley for garnish

Method
 

Season the Chicken
  1. In a medium bowl, toss the chicken pieces with 1 tablespoon of Cajun seasoning, garlic powder, paprika, and a pinch of salt and pepper. Let it sit while you prep the other ingredients.
Cook the Pasta
  1. Bring a large pot of salted water to a boil. Cook the rotini according to package directions until al dente. Reserve about 1 cup of pasta water before draining. Drain and set aside.
Sear the Chicken
  1. Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken in a single layer. Cook without moving for 3-4 minutes until golden brown. Flip and cook another 2-3 minutes. The chicken should be cooked through and smell amazing. Transfer to a plate.
Sauté Aromatics
  1. In the same skillet, add the onion and bell pepper. Cook for 3 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
Build the Sauce
  1. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer, then reduce heat to low. Stir in the heavy cream and cream cheese until smooth and creamy.
Add Cheese and Seasoning
  1. Gradually sprinkle in the Parmesan cheese, stirring constantly until melted. Add the remaining tablespoon of Cajun seasoning and thyme. Taste and adjust salt and pepper. If the sauce is too thick, add a splash of reserved pasta water.
Combine Everything
  1. Return the cooked chicken and any accumulated juices to the skillet. Add the drained rotini. Toss gently to coat all the pasta and chicken in the luscious sauce. Let it simmer for 2 minutes so the flavors meld.
Garnish and Serve
  1. Remove from heat. Sprinkle with fresh parsley and optional jalapeño slices if you like extra heat. Serve immediately, scooping up every last bit of that creamy Cajun chicken dish.
