Cheesy Tater Tot Ground Beef Casserole

Ingredients
  

Ground Beef
  • 1 lb ground beef (85/15)
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
Creamy Sauce
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Tater Tot Topping
  • 1 bag (32 oz) frozen tater tots
  • 2 cups shredded cheddar cheese, divided
  • Fresh parsley, chopped (optional for garnish)

Method
 

  1. Preheat the oven to 400°F (200°C). Take a 9x13 inch baking dish; there's no need to grease it.
  2. Place a large skillet over medium-high heat. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned. Drain excess grease from the pan.
  3. Return the skillet with the drained beef to the stove. Add the chopped onion and cook for 4-5 minutes, until soft and translucent. Add the minced garlic and cook for 1 more minute until fragrant.
  4. Reduce the heat to low. Pour in cream of mushroom soup, sour cream, milk, Worcestershire sauce, salt, and pepper. Stir until well combined and simmer for 1-2 minutes. Stir in 1 cup of shredded cheddar cheese until melted.
  5. Pour the beef and sauce mixture into the baking dish, spreading it evenly. Arrange frozen tater tots in a single layer over the top.
  6. Bake in the preheated oven for 30 minutes.
  7. Remove from the oven and sprinkle the remaining 1 cup of cheddar cheese over the tater tots.
  8. Return to the oven and bake for another 5-10 minutes until the cheese is melted and bubbly and the tater tots are golden brown.
  9. Let the casserole rest for 10 minutes before serving. Garnish with fresh parsley if desired.
