  • 1 tbsp rice wine vinegar mirin can be a sweeter alternative
  • 1 tbsp brown sugar or honey adjust to preference
  • 1 tsp sesame oil adds a crucial nutty depth
  • 1 tsp Sriracha or red pepper flakes optional, for spicy kick
  • 2 tbsp cornstarch for thickening the sauce

Method
 

  1. Prepare the Chicken: Start by patting your chicken breast pieces dry with paper towels. This step is vital for achieving a nice sear.   2. Whip Up the Sauce: In a separate small bowl, whisk together the soy sauce, chicken broth, oyster sauce, rice wine vinegar, brown sugar, sesame oil, Sriracha (if using), and the remaining 1 tablespoon of cornstarch.   3. Sear the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the chicken in a single layer, making sure not to overcrowd the pan.   5. Combine & Sauce It Up: Return the cooked chicken to the skillet with the broccoli. Give your prepared stir fry sauce another quick whisk, then pour it over the chicken and broccoli. Continue to stir fry for 1-2 minutes, constantly tossing, until the sauce has thickened and beautifully coats all the ingredients. The sauce will transform from a thin liquid to a glossy, rich coating.
