Chocolate Strawberry Yogurt Clusters Recipe

Ingredients
  

Base Ingredients
  • 2 cups Fresh Strawberries finely diced
  • 1 cup Greek Yogurt plain or vanilla
  • 2 tbsp Honey or Maple Syrup
  • 1 tsp Vanilla Extract
  • 1 tbsp Chia Seeds
Chocolate Coating
  • 1 cup Dark Chocolate Chips
  • 1 tsp Coconut Oil
  • 1/4 tsp Sea Salt for sprinkling

Method
 

Prepare the Base
  1. Wash and dry strawberries thoroughly. Dice them finely and place in a medium bowl.
  2. Add Greek yogurt, honey or maple syrup, and vanilla extract to the bowl with strawberries.
  3. Mix well to combine, then stir in chia seeds.
Form the Clusters
  1. Line a baking sheet with parchment paper.
  2. Using a tablespoon, scoop the yogurt and strawberry mixture onto the tray, forming small mounds or clusters.
  3. Place the tray in the freezer for at least 2 hours until frozen solid.
Melt the Chocolate
  1. In a microwave-safe bowl, combine dark chocolate chips and coconut oil.
  2. Heat in 30-second intervals, stirring in between, until the chocolate is glossy and smooth.
Dip and Chill
  1. Working quickly, dip each frozen cluster into the melted chocolate using a fork.
  2. Roll to coat evenly, then place back on the parchment paper.
  3. Sprinkle a pinch of sea salt on top while the chocolate is still wet.
  4. Return the tray to the freezer for an additional 15-20 minutes to firm up.

Notes
