Prepare the Base
- Wash and dry strawberries thoroughly. Dice them finely and place in a medium bowl.
- Add Greek yogurt, honey or maple syrup, and vanilla extract to the bowl with strawberries.
- Mix well to combine, then stir in chia seeds.
Form the Clusters
- Line a baking sheet with parchment paper.
- Using a tablespoon, scoop the yogurt and strawberry mixture onto the tray, forming small mounds or clusters.
- Place the tray in the freezer for at least 2 hours until frozen solid.
Melt the Chocolate
- In a microwave-safe bowl, combine dark chocolate chips and coconut oil.
- Heat in 30-second intervals, stirring in between, until the chocolate is glossy and smooth.
Dip and Chill
- Working quickly, dip each frozen cluster into the melted chocolate using a fork.
- Roll to coat evenly, then place back on the parchment paper.
- Sprinkle a pinch of sea salt on top while the chocolate is still wet.
- Return the tray to the freezer for an additional 15-20 minutes to firm up.

Notes
Store in an airtight container in the freezer for up to 2 months. Let sit at room temperature for 3-5 minutes if clusters are too hard to eat. These clusters are best enjoyed fresh, right from the freezer.
