- Combine cherries, sugar, and kirsch in a saucepan. Simmer until thickened, then cool.
- Heat cream, then pour over chocolate. Stir until smooth. Cool slightly.
- Whip cream, mascarpone, and vanilla until stiff peaks form.
- Layer ganache, cherry filling, whipped cream, and top with almonds and chocolate shavings.
