Classic Spaghetti Carbonara

Ingredients
  

  • 400 grams Spaghetti Dry pasta
  • 3 large Eggs Room temperature
  • 100 grams Pecorino Romano Grated
  • 150 grams Pancetta Diced
  • 1 teaspoon Black pepper Freshly ground

  • Frying pan
  • Wooden spoon

Method
 

  1. Boil salted water and cook spaghetti al dente. Reserve 1 cup of pasta water.
  2. In a pan, fry pancetta until crispy. Remove from heat.
  3. Whisk eggs, grated cheese, and black pepper in a bowl. Slowly add pasta water to emulsify.
  4. Toss cooked pasta with pancetta and egg mixture. Serve immediately.
