Equipment

  • Muffin tin

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup milk dairy or non-dairy
  • 2 large eggs
  • 1/4 cup honey or maple syrup optional for sweetness
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup add-ins e.g., chopped nuts, fruits, or chocolate chips

Instructions

  • Preheat Your Oven: Start by preheating your oven to 350°F (175°C) and lining a muffin tin with paper liners or greasing it with cooking spray.
  • Mix Wet Ingredients: In a large mixing bowl, combine the cottage cheese, milk, eggs, honey (if using), and vanilla extract. Whisk until well blended.
  • Combine Dry Ingredients: In another bowl, mix the whole wheat flour, baking powder, baking soda, and salt. Stir until evenly combined.
  • Combine Mixtures: Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing, as this can lead to dense muffins.
  • Add Your Favorite Ingredients: Gently fold in your chosen add-ins, ensuring they are evenly distributed throughout the batter.
