- If you want a smooth texture, pulse the cottage cheese in a blender for 10 seconds. If you prefer a bit of texture, mash it well with a fork in the bottom of your mug.
- Add the egg, vanilla extract, and sweetener to the cottage cheese. Whisk until the mixture is pale and slightly frothy.
- Stir in the flour, baking powder, and a pinch of salt. Mix just until the white streaks of flour disappear.
- In a small bowl, mix 1 tsp of cinnamon with 1 tsp of maple syrup or brown sugar. Drop spoonfuls of this mixture onto the batter and use a toothpick to swirl gently.
- Place the mug in the microwave and cook on high for 90 seconds. Watch for the moment the cake rises and the top looks matte rather than shiny.
- Let the cake sit for one minute. This allows the residual heat to finish cooking and set the structure.
