  • 1/2 cup Cottage Cheese Small curd for smoother texture
  • 2 tbsp Flour All-purpose flour or gluten-free flour blend
  • 1 piece Egg
  • 1 tbsp Sweetener Maple syrup, honey, or sugar
  • 1 tsp Cinnamon
  • 1/4 tsp Baking Powder
  • 1/2 tsp Vanilla Extract
  • Optional Add-ons Nuts, raisins, or chocolate chips

Method
 

  1. If you want a smooth texture, pulse the cottage cheese in a blender for 10 seconds. If you prefer a bit of texture, mash it well with a fork in the bottom of your mug.
  2. Add the egg, vanilla extract, and sweetener to the cottage cheese. Whisk until the mixture is pale and slightly frothy.
  3. Stir in the flour, baking powder, and a pinch of salt. Mix just until the white streaks of flour disappear.
  4. In a small bowl, mix 1 tsp of cinnamon with 1 tsp of maple syrup or brown sugar. Drop spoonfuls of this mixture onto the batter and use a toothpick to swirl gently.
  5. Place the mug in the microwave and cook on high for 90 seconds. Watch for the moment the cake rises and the top looks matte rather than shiny.
  6. Let the cake sit for one minute. This allows the residual heat to finish cooking and set the structure.
