Ingredients
  

  • 1 ½ cups cottage cheese preferably small curd
  • 1 ½ cups all-purpose flour can substitute with whole wheat flour
  • 1 large egg
  • 2 tablespoons olive oil
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • Optional: herbs like rosemary thyme, or oregano for added flavor

Instructions
 

  • Prepare the Dough:
  • o In a large bowl, mix together the cottage cheese, egg, olive oil, and salt. Stir until well combined.
  • o Gradually sift in the flour and baking powder. Start with one cup of flour and fold it into the wet ingredients. Continue adding the rest of the flour until you get a soft dough that’s just slightly sticky.
  • Shape the Flatbread:
  • o Transfer the dough onto a lightly floured surface. Knead for about 3-5 minutes until the dough becomes smoother and elastic.
  • o Divide the dough into 4-6 equal parts, depending on how big you want your flatbreads to be. Roll each piece into a ball, then flatten them into round or oval shapes with a rolling pin (or your hands for a more rustic look).
  • Cook the Flatbread:
  • o Heat a non-stick skillet over medium heat. No oil is necessary since the dough contains olive oil.
  • o Once the skillet is hot, place one piece of flatbread in the pan. Cook for about 2-3 minutes on each side or until golden brown spots appear. The flatbread should puff slightly as it cooks.
  • o Repeat with the remaining pieces of dough.
  • Serve:
  • o Enjoy warm with your favorite toppings, like a drizzle of olive oil, hummus, fresh tomatoes, or even a sprinkle of sea salt. These flatbreads are also fantastic as a base for pizza or as a side for soups and stews.

You can double the recipe if you're serving a crowd. The dough keeps well in the fridge for up to 24 hours.
