Ingredients
  

  • 2 cups all-purpose flour
  • ½ cup cottage cheese smooth or chunky, as per preference
  • 3 cloves garlic minced
  • 2 tablespoons yogurt for added softness
  • 1 tablespoon olive oil
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup warm water
  • Butter or ghee for brushing
  • Fresh herbs like cilantro or parsley for garnish

  • Step 1: Prepare the Dough
  • In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Mix well to evenly distribute the leavening agents.
  • Add the yogurt and cottage cheese to the dry mixture. The cottage cheese gives a soft, creamy texture, and yogurt helps bind everything together.
  • Gradually add the warm water while mixing until the dough comes together. Knead for 5-7 minutes until it becomes soft and smooth.
  • Cover the dough with a damp towel and let it rest for 30 minutes. Resting helps the dough become more pliable and easier to work with.
  • Step 2: Infuse the Garlic
  • While the dough rests, heat the olive oil in a small pan and sauté the minced garlic for about 1-2 minutes until it's fragrant and golden. Set it aside. This garlic-infused oil will add another layer of flavor to the naan.
  • Step 3: Rolling and Shaping
  • Divide the dough into 6 equal-sized balls. Roll each one into a flat disc using a rolling pin. Try to aim for about 6-8 inches in diameter.
  • Once rolled, lightly brush each disc with the garlic-infused oil.
  • Step 4: Cook the Naan
  • Heat a cast-iron skillet or non-stick pan over medium-high heat. When the pan is hot, place one rolled-out naan onto the surface. Cook for about 2 minutes until bubbles form on the surface.
  • Flip and cook for another 1-2 minutes on the other side, brushing with more garlic oil if needed. The naan should be golden brown with slight charring, which adds a lovely smokiness.
  • Step 5: Garnish and Serve
  • Once off the pan, immediately brush the naan with melted butter or ghee. Garnish with fresh herbs like cilantro or parsley for a burst of freshness. Serve hot with your favorite dip or curry!
