Step-by-Step Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease two small oven-safe ramekins or bowls with olive oil or cooking spray.
- Spoon half of the cottage cheese into each ramekin. Spread it evenly along the bottom.
- Pour a few tablespoons of pizza sauce over the cottage cheese. Swirl it slightly to mix but leave some patches of white.
- Divide the bell peppers, mushrooms, olives, and onions between the bowls. If using cooked meat, add it now.
- Sprinkle a pinch of oregano and garlic powder over each bowl.
- Generously cover each bowl with shredded mozzarella and a tablespoon of Parmesan.
- Bake for 12 to 15 minutes, or until the cheese is melted and bubbly, and the edges are golden.
- Optional: For a browned, crispy top, switch the oven to broil for the last 1 to 2 minutes. Watch closely to avoid burning.
- Let the bowls cool for a minute or two. The cheese will set slightly, making it easier to scoop.
- Garnish with fresh basil if you have it, and a sprinkle of red pepper flakes for heat.

Notes
Don't overmix the cottage cheese and sauce to keep some separation. Use full fat cottage cheese for richness. Precook watery veggies to avoid a soggy bowl. For a spicy version, add jalapeño slices or a drizzle of hot honey before serving. You can also try different proteins like ground turkey or shredded chicken.
