  • 1 clove garlic minced
  • 2 tablespoons lemon juice or white wine vinegar for a tangier twist
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey optional for a touch of sweetness
  • Salt and pepper to taste
  • 2 tablespoons fresh herbs like dill, parsley, or chives, finely chopped
  • ¼ cup water adjust based on desired consistency

Method
 

  1. Blend the Base: In a blender or food processor, combine the cottage cheese, olive oil, garlic, lemon juice, mustard, and honey (if using). Blend until smooth and creamy. If the mixture is too thick, slowly add the water to reach your preferred consistency.
  2. Season: Once blended, taste the dressing. Add salt, pepper, or additional lemon juice if you want more zing. If you prefer a bit more sweetness, add a small amount of honey.
  3. Mix in Herbs: Transfer the blended dressing to a bowl and stir in the chopped herbs. This step adds a fresh, vibrant element to the dressing and makes it visually appealing as well.
  4. Chill and Serve: Let the dressing chill in the refrigerator for about 30 minutes. This helps the flavors meld together beautifully. Once ready, drizzle over your favorite salads or use as a dip or sauce for a variety of dishes.
