Ingredients
  

Main Ingredients
  • 1 lb pork ribs or pork belly
  • 8 cups water
  • 1 medium onion quartered
  • 2 medium tomatoes quartered
  • 2 tbsp fish sauce adjust to taste
Souring Agent
  • 2 tbsp tamarind paste or fresh tamarind, adjusted to taste
Vegetables
  • 1 radish sliced
  • 1 bunch water spinach (kangkong)
  • 10 okra
  • 1 cup string beans (sitaw) cut into pieces
  • 1 eggplant sliced
  • 1 green chili pepper optional, for heat

Method
 

  1. In a pot, bring water to a boil. Add pork ribs and let it simmer for 10 minutes. Skim off any impurities.
  2. Add onions, tomatoes, and fish sauce. Continue to simmer for 20 minutes until the pork is tender.
  3. Add tamarind paste and stir well. Simmer for another 5 minutes, adjusting the sourness to taste.
  4. Add radish and cook for 5 minutes, followed by eggplant, string beans, and okra. Let it cook for another 5 minutes.
  5. Finally, add kangkong and green chili. Turn off the heat and let the residual heat wilt the greens.
  6. Serve hot and enjoy with steamed rice.

Notes
