- Begin by taking your beautiful salmon fillet and patting it completely dry with paper towels. This is a non negotiable step for achieving maximum crispiness. Moisture is the enemy of crisp. Cut the salmon into uniform 1 inch cubes.
- Place the salmon cubes in a medium bowl. Sprinkle the cornstarch over the top, along with a pinch of salt and pepper. Gently toss the pieces with your hands or a soft spatula until each cube is lightly and evenly coated.
- Lightly spray your air fryer basket with cooking spray to prevent sticking. Arrange the cornstarch coated salmon bites in a single layer in the basket. It's crucial not to overcrowd the basket.
- Set your air fryer to 400°F (200°C). Cook the salmon bites for 4 to 5 minutes. The air fryer salmon bites cooking time is quick, so keep an eye on them. The edges should be just starting to turn golden and crisp.
