Crispy Feta Fried Eggs

Ingredients
  

  • 1 block Full fat Greek feta cheese crumbled
  • 2 eggs Large eggs fresh
  • 2 tortillas Small tortillas
  • 1 tbsp Olive oil
  • 1 avocado Fresh avocado mashed
  • 1 tsp Red pepper flakes
  • 1 pinch Cracked black pepper
  • 1 tsp Dried oregano

Equipment

  • Non-stick skillet,

Method
 

Prepare the skillet
  1. Heat a small non-stick skillet over medium heat. Add a tiny splash of olive oil and swirl it around.
Create the cheese ring
  1. Sprinkle a generous amount of crumbled feta cheese in a circular shape directly into the pan. Leave a small hole in the center.
Add the egg
  1. Gently crack one large egg into the center of the feta ring. Season with red pepper flakes and pepper.
Cover and cook
  1. Cover the skillet with a lid for about two minutes. This traps the steam and helps cook the whites while keeping the yolk runny.
Prepare the base
  1. While the egg cooks, warm your tortilla. Top with mashed avocado.
Slide and serve
  1. Once the cheese is crispy and golden, use a spatula to gently lift the entire unit and slide it onto your tortilla.

Notes
